Rice Pudding Recipe - Latin Style

Rice pudding is one of the most popular desserts in Latin America. It is the epitome of comfort food. Enjoy this desert but keep in mind that to stay healthy you need to eat small portions of these delicious treats.

Ingredients

3 cups whole milk
1/4 cup Raw Sugar, Granulated
2 teaspoons vanilla extract
1 cinnamon stick
1 cup uncooked long grain rice (brown or white rice)
1 pinch salt
2 tablespoons rum or orange juice (optional)
1 pinch nutmeg


Preparation
1. Pour milk, sugar, and vanilla into a medium saucepan. Add cinnamon stick and rum or orange juice (optional). Bring to a boil.
2. Add rice and salt and cover. Cook over low heat for 30 minutes (45 minutes if using brown rice) or until most of the milk is absorbed. Remove saucepan from heat, set aside for 10-15 minutes.
3. Spoon rice pudding into dessert dishes. Sprinkle with nutmeg. Serve warm or chilled. Enjoy!

RICE PUDDING RECIPE

Ingredients:

3/4 cup uncooked white rice
2 cups milk, divided
1/3 cup white sugar
1/4 teaspoon salt
1 egg, beaten
2/3 cup golden raisins
1 tablespoon butter
1/2 teaspoon vanilla extract

What’s Next:

In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.

In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt.

Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg and raisins. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm. Enjoy!
